BALSAMIC VINEGARS OF MODENA ITALY
 

Artisan Quality Balsamic Vinegar of Modena is made using ancient procedures. The process begins with careful selection
of the Lambrusco and Trebbiano grapes, grown in the Modena region. They are ideal for the high sugar content required
for production. These grapes are pressed and the resulting juice called “must” is heated in copper cauldrons until the
volume is reduced through evaporation to about 40% of the original weight. The liquid is then decanted into wooden
barrels (chestnut, oak, juniper and cherry) and left to age and transform into vinegar. As the time goes by, part of the
liquid evaporates and part of the liquid is absorbed into the wood. This is the moment called “rincalzo” which happens
in the period of grape harvest. The liquid is transferred into smaller barrels while the new “must” is added to “top off”
the bigger barrel.
And so continues the process.

4 Star Quality: Represents some of the youngest balsamic made. It is typically a dark bruneĴe color with an intense
aroma of the grapes. Its pungent quality adds a balance of sweet and sour flavor to salads and grilled vegetables. It is
commonly reduced over heat to create a wonderful reduction for special sauces.

 8 Star Quality: A superior balsamic vinegar, with a rich brown color and a slightly woody bouquet. It is quite dense
and clings to the food on which it is drizzled. We recommend this product especially with raw fruits and vegetables to
bring out the fresh flavors of the earth’s bounty. It is also served with pieces of Parmigiano Reggiano and Taleggio
Cheeses, a favorite local dish in Modena.

25 Star Balsamic: The true artisan quality product from centuries old recipes. The vinegar is aged in small barrels under
the traditional methods with strict controls. It reaches a perfect balance of aroma and flavor when fully mature. It can be
enjoyed many ways but always for a special occasion or recipe.

25 Star White Balsamic: Different from typical balsamic vinegar in that it has a lower acidity level and a pale color.
It has a delicate balsamic flavor that compliments many fine recipes without darkening the ingredients of the dish.
Organic Balsamic: Produced only with first quality grapes that have been cultivated under the guidelines of organic
agricultural methods. These methods protect the environment by reducing the use of fertilizers and totally avoiding
pesticides and synthetic herbicides. The entire production is processed in accordance with the International Standards
set forth by the renowned certifier, ECOCERT Italy
